GET BAKED: Chocolate Chip Cookie In A Mug

When life (or a lazy day) happens, have a chocolate! National Chocolate Chip Day on May 15 is the perfect excuse to indulge in a homemade ooey gooey chocolate chip cookie in a mug that can be made in your microwave and send you surfing on some high [micro] waves of the tasty variety. A chocolate chip cookie made in a microwave, SAY WHAT?! Yup, guys and gals, welcome to Mindblown-ville, population: 1, you...


This freshly “baked” chocolate chip cookie is both prepped and made in a single coffee mug. Remember that whole lazy day comment above? YUUUPP... and you're welcome. Using MagicalButter butter will put this sweet ‘n salty treat high up on your favorites list. Mouth, meet happy.


INGREDIENTS:

1 tablespoon MagicalButter Butter [read our HOW TO: MagicalButter Butter]

1 egg yolk

1 tablespoon brown sugar

1 tablespoon granulated sugar

Pinch of salt

¼ cup all-purpose flour

2 tablespoons chocolate chips


DIRECTIONS:

1. Very lightly coat the inside of a 6- or 8-ounce mug or ramekin with either cooking spray, butter or coconut oil.

2. In the mug, mix the MagicalButter butter, egg yolk, sugars and salt first. Mixing these ingredients first will ensure your batter won’t get too crumbly.

3. Stir in the flour and then add the chocolate chips.

4. Microwave for 1 minute (depending on your microwave’s strength, you may need to slightly adjust the time). *NOTE: The top will look light and yellow, and may even look undercooked, but if you gently press the top and it slightly springs back, it's perfect-o! Do not overcook the cookie because it will harden and dry.
